Easy Lemon Curd
as promised here is the MOST delicious lemon curd recipe, perfect for over yoghurt, berries, on toast or as a cake topping or filling.
The ingredients you will need are:
3 egg yolks
6 tablespoons of caster sugar
1/4 cup of lemon juice
rind of 1/2 a lemon
1-2 tablespoons of cold butter.
To begin with whisk together the sugar, eggs, lemon juice and rind in a small saucepan.
Once combined place over a low heat and stir CONSTANTLY until the mixture thickens and becomes like a custard.
Take of the heat and add your butter stirring until smooth and creamy.
If your eggs have cooked and you have any little lumps strain the mixture.
Pour into an airtight jar or bowl (if using a bowl cover with plastic wrap) and refridgerate for at least an hour.
This recipe will keep for around a week in the fridge.
