To make these little gems you will need:
-1/2 cup of peanut butter
-1/2 cup sugar free icing sugar
-2 tbsp of cocoa powder
-2 tbsp of coconut oil
-2 tbsp of agave nectar
Mix the peanut butter and icing sugar in your food processor until it comes together. Work quickly to shape your cups! Don't worry about perfection, you can adjust the shape once they're frozen!
Place them on a baking sheet in the freezer for an hour (adjusting the shape 30 mins in). Before removing them from the freezer make your 'chocolate' blend the coconut oil, cocoa and agave nectar in a bowl, with a whisk, until you have a glossy chocolate.
Remove your peanut butter mixture and use a fork to dip them into the chocolate mix (try and make your chocolate thicker than mine!) place back on the baking sheet and freeze for another 15 mins.
These are best kept in the freezer!
Recipe will make around 10 cups.
