Paradise Slice

Hello everyone, Hope you are enjoying your weekends! 

I spent my saturday walking the pooch and baking up some delicious naughty weekend treats. 

I thought I'd share this lovely recipe with you all. I found this in the Annie Bell recipe book and they are to die for. 

To make these messy, but yummy treats you will need: 

For the bottom layer: 
75 g butter
75g golden caster sugar 
150g plain flour
100g ground almonds 
1 teaspoon of lemon/ orange zest. 

for the sponge: 
110g raspberry jam 
110g butter 
150g golden caster sugar 
150g desiccated coconut 
75g ground almonds 
1 teaspoon baking powder
110g sultanas 
4 medium eggs 

To make the shortbread base place everything in a food processor and blitz until it comes together. The mixture will be sticky at this point. Use a spatula or your fingers to press into your tray bake tin and cover with cling film to smooth, place in the fridge for an hour to chill. 

Remove from the fridge, and discard the cling film. Prick the mixture all over and place in a preheated oven at 140c for 25- 30 minutes until the shortbread begins to colour. Leave to cool completely. 

Once cool spread your jam over the shortbread layer and then get making the sponge. 

To make the sponge first cream butter and sugar in the food processor, then add each egg one at a time. Pour the mixture into a seperate bowl and fold in the rest of your ingredients. Pour over your biscuit and jam base and bake in the oven at 170c for around 30-40 mins until the sponge is set, and golden brown. 

Cut into slices (this is tricky) and sprinkle with icing sugar!

I think we can all agree that these wont win any prizes for presentation, but it's all about texture and flavour and these are bursting with that!
